I can't believe that anyone older than 8 likes toilet humor. Conker's Bad Fur Day is like a terrible adult cartoon in terms of its humor.

Mr.Freeze from Batman Arkham City. You can't use the same move on him twice as he adapts. It's just great as most boss fights make you do the same thing over and over.

Smough and Ornstein from Dark Souls. Harder than nails, but totally worth it. Fun, a great challenge, and something to work for. Especially if you let Ornstein power up.
